Broccoli & Sausage Egg Casserole
This is an easy and quick breakfast casserole.

- 1 pound ground breakfast sausage, like Jimmy Dean
- 8 large eggs
- 16 ounces small curd cottage cheese
- 8 ounces shredded cheddar cheese, or choice of cheese
- 4 Tbs butter, cubed
- 6 Tbs Flour
Cook ground sausage, chopping into small pieces. Drain.
Meanwhile add eggs to a bowl, and whisk together
Add sausage and remaining ingredients to bowl and mix together
Pour mixture into a 9x13 pan (or slightly larger)
Bake at 350 degrees for 30-45 minutes.
Serve with fruit, yogurt or options of your choice
This is a very versatile recipe. Have fun experimenting with meat, vegetable, and cheese options!
You can substitute broccoli with asparagus or spinach (fresh or frozen)
The number of eggs used can be flexible -- 6-10 are best.
Substituting other shredded cheese options is a good way to change up flavors
Cooked bacon could be exchanged for sausage.
Don't overbake! It will continue to cook after removing from the oven!
