A healthy breakfast muffin — that actually tastes good!

The first time I took a bite of this muffin was over Thanksgiving weekend — at my sister’s house.  My mom had brought her a stash of the muffins — and she was graciously sharing them with the rest of us.



First, I’m just going to go on record and say that I’m not a “healthy food” type person. 
I try to eat healthy – but I know for sure that I don’t eat enough fruits and vegetables — or dairy, or fish.  But I’m working on it.  
Admitting is the first step to healing right?


I’m writing to tell you, that you should make this muffins.
Today.


Preheat your oven to 375 degrees.
Prepare muffin pans with paper liners, or coat with cooking spray.


Then, add the following ingredients to your food processor 
(or blender) and combine and blend well:

  • 2 Oranges — washed, quartered, seeded…leave rind on.
  • 1 cup Brown Sugar
  • 1 cup Buttermilk
  • 1/2 cup Canola Oil
  • 2 eggs
  • 1 teaspoon baking soda


I cut the stringy stuff out of the oranges . . .
This is what it will look like after you’ve combined it 

Then get out a large bowl and combine these ingredients:
  • 1-1/2 cups Oat Bran
  • 1 Cup Flour
  • 1 Cup Flaxseed, ground
  • 1 Cup Natural Bran
  • 1 Tablespoon Baking Powder
  • 1/2 teaspoon salt

Pour your orange mixture into the dry ingredients.
Mix- by hand- until well blended

Stir in 1-1/2 cup golden raisins if you’d like
and nuts — if you’d like.
I didn’t this time.

Divide the batter evenly among muffin cups almost to the top.
I filled these a bit too much — don’t hate me.
Bake 18 – 20 minutes
or until a toothpick inserted in center comes out….. you know it…..clean.

Cool in pan for 5 minutes before removing to a cooling rack.
These muffins freeze really well.  I wrap them individually so I can grab one quick to take to work for breakfast with my coffee.
I eat breakfast at my desk.  With my coffee.  While I check email.

If you pull one out of the freezer to eat, microwave about 20 seconds.
It will be perfect.
They taste yummy plain, or with honey drizzled over.
Per muffin:
187 calories
4 grams protein
30 grams carbs
8 grams fat
3 grams fiber

One muffin and your cuppa’ joe (or tea) should fill you up for breakfast!
