Aunt Minnie’s Secret Recipe

Last week we had accrued more eggs than we could use and it was time to take some serious action. We had to make something with eggs!
Something that used more than a few eggs. Something like……egg salad…..or deviled eggs.



My kids LOVE deviled eggs. But they don’t like MY deviled eggs. They like their Grandma’s deviled eggs. My mom has 13 grandchildren and they all ask her to bring her deviled eggs to family gatherings.


So I decided it was finally time for me to beg and bribe mom for the secret family recipe she uses to make her deviled eggs. After much begging and numerous bribes mom finally relented and gave up the recipe “for her grandkids”. I promised I’d never let the secret recipe out.


Turns out the recipe is from my Great Aunt Minnie. I never had the pleasure of meeting Aunt Minnie, but I know she is my Grandma’s sister. I also know the recipe goes back to the early 1900’s.


So go get yer eggs….
At the store, in the fridge or from the chicken coop. Actually not the chicken coop…..because fresh eggs don’t make the best boiled eggs. Keep your fresh eggs for breakfast and use the old ones to boil. Fresh eggs are difficult to peel.

Place them eggs in a single layer in a saucepan. Add enough cold water to just cover the eggs.



Bring to a rapid boil over high heat. (water will have large rapidly breaking bubbles).

Remove from heat, cover, and let stand for 15 minutes; drain.

Run cold water over the eggs or place them in ice water until cool enough to handle; drain again.

Peel immediately. To peel eggs, gently tap each egg on the countertop. Roll the egg between the palms of your hands. Peel off eggshell, starting at the large end.


Halve eggs lengthwise and remove yolks. Set whites aside.


Place yolks in a bowl; mash with a fork. Set aside.


Now let’s make the “Secret Ingredient” . . .

In a saucepan whisk together and set aside:
1 cup sugar
1 teaspoon corn starch



In a glass bowl, whisk together:
2 Teaspoons mustard
2 eggs, adding one egg at a time……whisk together until blended.


Slowly add 1 cup vinegar while whisking….

Then slowly add the liquid mixture to the sugar mixture in the saucepan.




Whisk or stir as you combine mixtures.



Cook slowly over medium heat until mixture thickens. Stirring constantly.

Put the secret dressing in a jar with a lid.
The dressing will keep for months in the refrigerator.

Now….back to those eggs….


If you boiled 6 eggs, add approximately 1/4 cup mayo.

Stir and mix together.



Now, grab that jar of secret dressing you just made and scoop out a few teaspoons (or a tablespoon) and add to your yolk mixture and stir.
Add salt and pepper to taste.
Go ahead and add some Turmeric too. Turmeric is good for you. It’s good for the digestive system and fights acne. (really it does). It also makes the yolks a pretty color.

Now go ahead and stuff those reserved egg whites with the yolk mixture. You can spoon the mixture in, or put the mixture in a ziploc bag and clip the corner …then squeeze the yolks into the eggs.


Garnish eggs with paprika or parsley.
Eat.


Next time you make potato salad….add some secret dressing too!
You can also use the dressing for lettuce salads! Just add a little honey then top lettuce with sweet onion (Vidalia) and some bacon.
You can add the onion at any time.


Mom was actually very happy to share this recipe with all my blog friends. She’s never been one to keep a secret recipe. We both have the same theory….us women need to stick together in this world…we need to share our successes in the culinary kingdom with one another. We should be helping each other “look good” in the kitchen! No recipe should be kept a secret!
