A healthy breakfast muffin — that actually tastes good!
The first time I took a bite of this muffin was over Thanksgiving weekend — at my sister’s house. My mom had brought her a stash of the muffins — and she was graciously sharing them with the rest of us.
First, I’m just going to go on record and say that I’m not a “healthy food” type person.
I try to eat healthy – but I know for sure that I don’t eat enough fruits and vegetables — or dairy, or fish. But I’m working on it.
Admitting is the first step to healing right?
I’m writing to tell you, that you should make this muffins.
Today.
Preheat your oven to 375 degrees.
Prepare muffin pans with paper liners, or coat with cooking spray.
Then, add the following ingredients to your food processor
(or blender) and combine and blend well:
- 2 Oranges — washed, quartered, seeded…leave rind on.
- 1 cup Brown Sugar
- 1 cup Buttermilk
- 1/2 cup Canola Oil
- 2 eggs
- 1 teaspoon baking soda
- 1-1/2 cups Oat Bran
- 1 Cup Flour
- 1 Cup Flaxseed, ground
- 1 Cup Natural Bran
- 1 Tablespoon Baking Powder
- 1/2 teaspoon salt
