Homemade Guacamole

With the Super Bowl in just a few days, I thought I’d share my favorite Guacamole recipe. Even if you don’t watch the Super Bowl (What?) you’ll want to have this recipe in your collection!

Best Guacamole

Our family loves guacamole. It’s one of our favorite snacks, right up there in the rankings with our famous homemade potato chip dip, but I’ll save that recipe for another day. We’ve tried many different ways to make guacamole, and this simple, five-ingredient recipe, created by my daughter, Cara, is the only recipe we make now.

Our family has named this recipe “Cara’s Guacamole.”

Easy Guacamole Recipe

With only 5 ingredients, the guacamole comes together in just a few minutes. For a single batch, you’ll need 6 avocados, half of a large red onion (finely chopped), one bunch of cilantro (chopped), a large pinch of coarse salt, and the juice of 1-1/2 limes. As you can tell in the photos, I am using a large number of ingredients — I was making this batch for a crowd, so it is more than doubled.

The only chopping needed is the red onion and cilantro!

Freezing avacados

That little batch of mashed avocados in the top left corner of the photo had just been pulled from the freezer. It’s a great way to preserve avocados that are ripening before you are ready to use them. I just mash up the avocados, add some lime juice, and put them in a quart ziploc bag, then seal to squeeze (and flatten the bag) to remove all air and store in the freezer. The lime will keep the avocados from turning brown, and when you are ready to make your guacamole, just remove the mashed avocados about an hour prior to mixing ingredients. You could also just freeze the avocados whole!

The best and easiest guacamole

One of the secrets to making this guacamole is adding enough salt, yet not too much. Start by adding a teaspoon, then stir, taste, and add more as desired.

Cara’s Guacamole

Ingredients
  

  • 6 medium Avocados
  • 1/2 large red onion, finely chopped
  • 1 bunch cilantro
  • limes, juiced
  • Coarse salt

Instructions
 

  • Remove avocados from skin, removing pit and add to a medium bowl.
  • Mash avocados with potato masher, bottom of a cup, or a fork
  • Add finely chopped red onions to avocados
  • Add jce of 1½ limes to mixture
  • Add 1-2 large pinches of salt to mixture
  • Chop and add cilantro to mixture
  • Lightly stir all ingredients together and adjust salt if needed.

Notes

Spread this guacamole on toast and sprinkle it with everything -but-the-bagel seasoning for a delicious breakfast! 
Also delicious with an easy over egg on top of the toast
